Asian Tofu Salad recipe
Ingredients:
12 oz of lowfat firm tofu.
2 cloves garlic.
2 teaspoons of fresh ginger root, grated.
½ teaspoon of chili paste.
2 tablespoons of soy sauce.
2 tablespoons of rice vinegar.
1 teaspoon of dark sesame oil.
1/3 cup of red bell peppers, chopped.
1/3 cup of scallions, chopped.
1 tablespoon of fresh parsley, chopped.
Preparation Instructions:
Crumble the tofu using a wooden spoon or fork.
Whisk the garlic, ginger root, chili paste, soy sauce, rice vinegar and sesame oil together to make the dressing.
Add the dressing, bell pepper, onion and parsley. Mix thoroughly.
Serve at room temperature or chilled.
