Chilled Tofu with Bean Sprouts recipe

Ingredients:

½ lb of fresh mung bean sprouts.
3 tablespoons of rice vinegar.
2 tablespoons of soy sauce.
2 tablespoons of sesame oil.
1 tablespoon of chilli garlic sauce.
2 teaspoons of honey.
16 oz (1 packet) of soft tofu, drained.
1 teaspoon of toasted white sesame seeds.
½ teaspoon of black sesame seeds.
¼ cup of chopped toasted walnuts.

Preparation Instructions:

In a pot of boiling water, parboil the bean sprouts for 1 minute.

Drain, rinse with cold water, and drain again.

Remove to a serving plate, cover and chill.

In a bowl, combine the rice vinegar, soy sauce, sesame oil, chilli garlic sauce and honey to create the dressing. Set aside.

Cut the tofu into half-inch cubes, then place over the chilled mung bean sprouts.

Drizzle the dressing over tofu and garnish with sesame seeds and walnuts.
