Indonesian Tofu with Peanut Butter recipe

Ingredients:

10 ½ oz of low-fat tofu, firm.

¼ cup of peanut butter, reduced fat, creamy.
¼ cup of water.
2 tablespoons of soy sauce.
2 teaspoons of lemon juice.
2 teaspoons of honey.
¼ teaspoon of garlic.
¼ teaspoon of ginger.
Pinch of black pepper.
1 tablespoon of onion, grated.

4 cups of cooked rice.

Preparation Instructions:

In a small bowl, combine all of the ingredients except the tofu and rice. Mix with a whisk.

Slice the tofu into half-inch slices.

Cover with marinate.

Marinate in your refrigerator for 30 minutes.

Remove from refrigerator and allow to stand at room temperature for 30 minutes.

Preheat oven 350°F (175°C).

Place the tofu in a single layer on a baking sheet and cover with marinate.

Bake uncovered for 15 minutes, then place under broiler until brown.

Serve over cooked rice.
